Ingredients

The dough

  • ¾ cup firmly packed almond flour or almond meal
  • ¼ cup firmly packed coconut flour
  • 1 teaspoon baking soda
  • ¼ teaspoon fine salt
  • Pinch cinnamon (optional)
  • ½ cup unsalted butter or coconut oil, melted
  • ½ cup real maple syrup or honey
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips or chopped dark chocolate

Optional toppings

  • to taste flaky sea salt, for sprinkling on top

Instructions

  1. 1. Preheat the oven to 350°F and line a cookie sheet with parchment paper.
  2. 2. In a medium bowl, whisk together the almond flour, coconut flour, baking soda, salt, and cinnamon.
  3. 3. In a separate bowl, mix the melted butter, maple syrup, egg, and vanilla extract until well combined.
  4. 4. Combine the wet and dry ingredients, then fold in the chocolate chips.
  5. 5. Chill the dough in the refrigerator for 5-10 minutes.
  6. 6. Scoop tablespoon-sized mounds of dough onto the baking sheet, leaving space between each cookie.
  7. 7. Bake for 11-13 minutes until golden brown, then allow to cool slightly on the sheet before transferring to a cooling rack.
