Instructions
- 1. Preheat the oven to 350°F and line a cookie sheet with parchment paper.
- 2. In a medium bowl, whisk together the almond flour, coconut flour, baking soda, salt, and cinnamon.
- 3. In a separate bowl, mix the melted butter, maple syrup, egg, and vanilla extract until well combined.
- 4. Combine the wet and dry ingredients, then fold in the chocolate chips.
- 5. Chill the dough in the refrigerator for 5-10 minutes.
- 6. Scoop tablespoon-sized mounds of dough onto the baking sheet, leaving space between each cookie.
- 7. Bake for 11-13 minutes until golden brown, then allow to cool slightly on the sheet before transferring to a cooling rack.
