Instructions
- Preheat the oven to 350ºF.
- Stir the almond butter to mix in any oil that has pooled at the top.
- In a large bowl, combine almond butter, sugar, egg, vanilla, baking soda, and salt, stirring until you have a thick cookie dough.
- Gently mix in the chocolate chips until evenly distributed.
- Scoop one tablespoon of dough and shape it into a small disc, placing it on a lined baking sheet.
- Repeat with the remaining dough, working in batches if necessary.
- Bake for 12 minutes or until golden brown on top.
- Allow the cookies to cool completely before removing them from the baking sheet.
