Ingredients

  • cup gluten-free rolled oats
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup almond butter
  • cup dark brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • cup chocolate chips

Instructions

  1. Preheat the oven to 350°F and line two baking sheets with parchment paper.
  2. In a medium bowl, combine the oats, baking soda, salt, and cinnamon.
  3. In a stand mixer, beat the almond butter, brown sugar, eggs, and vanilla until smooth.
  4. Slowly add the oat mixture to the almond butter mixture and mix until combined.
  5. Stir in the chocolate chips.
  6. Scoop 2 tablespoon rounds of dough onto the prepared cookie sheets.
  7. Bake for 9-11 minutes until slightly crispy and set.
  8. Cool for 2 minutes on the cookie sheet before transferring to a wire rack to cool completely.
