Instructions
- Preheat the oven to 350°F and line two baking sheets with parchment paper.
- In a medium bowl, combine the oats, baking soda, salt, and cinnamon.
- In a stand mixer, beat the almond butter, brown sugar, eggs, and vanilla until smooth.
- Slowly add the oat mixture to the almond butter mixture and mix until combined.
- Stir in the chocolate chips.
- Scoop 2 tablespoon rounds of dough onto the prepared cookie sheets.
- Bake for 9-11 minutes until slightly crispy and set.
- Cool for 2 minutes on the cookie sheet before transferring to a wire rack to cool completely.
