Ingredients

  • 1 large egg
  • ½ cup butter, softened
  • ½ cup cane sugar
  • cup brown sugar
  • 1 teaspoon pure vanilla extract
  • 2 cups gluten-free quick cook oats
  • ½ cup gluten-free flour blend
  • ½ teaspoon baking soda
  • ¼ teaspoon fine salt
  • ½ cup chocolate chips
  • cup chopped pecans

Instructions

  1. Preheat the oven to 350°F and prepare baking sheets.
  2. Cream together the egg, butter, cane sugar, brown sugar, and vanilla in a mixing bowl.
  3. Add oats, flour, baking soda, and salt to the mixture and mix well.
  4. Fold in the chocolate chips and chopped pecans.
  5. Scoop the dough onto the prepared baking sheets, spacing them apart.
  6. Bake for 12-16 minutes until golden brown on the edges.
  7. Cool on the baking sheets for a few minutes before transferring to wire racks.
