Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a mixing bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, whisk together the melted butter, raw sugar, coconut sugar, and vanilla until combined, then add the egg and whisk until creamy.
- Combine the wet and dry ingredients, mixing until just combined, then fold in the oats, cranberries, and chocolate chips.
- Chill the dough in the fridge for 15-20 minutes.
- Using a cookie scoop, drop cookies onto the prepared baking sheet.
- Bake for 10-12 minutes until golden and firm around the edges.
- Cool on the baking sheet for 15 minutes before transferring to a cooling rack.
