Ingredients

The cookie dough

  • ¾ cup gluten-free flour or whole wheat flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • cups rolled oats
  • ½ cup melted coconut oil
  • ½ cup maple syrup
  • 1 large egg
  • 1 tsp vanilla extract

Mix-ins

  • cup chocolate chips
  • cup dried cranberries

Instructions

  1. Preheat the oven to 350°F.
  2. In a small bowl, mix the flour, baking soda, salt, and oats.
  3. In a large bowl, combine the melted coconut oil, maple syrup, egg, and vanilla extract.
  4. Add the dry ingredients to the wet ingredients and mix until combined.
  5. Fold in the chocolate chips and dried cranberries.
  6. If the batter is too runny, refrigerate it for a few minutes to solidify.
  7. Drop tablespoon-sized amounts of batter onto a cookie sheet.
  8. Bake for 9 to 10 minutes until just set.
  9. Let the cookies cool on the baking sheet for a minute before transferring them to a wire rack.
