Instructions
- Preheat the oven to 350°F.
- In a small bowl, mix the flour, baking soda, salt, and oats.
- In a large bowl, combine the melted coconut oil, maple syrup, egg, and vanilla extract.
- Add the dry ingredients to the wet ingredients and mix until combined.
- Fold in the chocolate chips and dried cranberries.
- If the batter is too runny, refrigerate it for a few minutes to solidify.
- Drop tablespoon-sized amounts of batter onto a cookie sheet.
- Bake for 9 to 10 minutes until just set.
- Let the cookies cool on the baking sheet for a minute before transferring them to a wire rack.
