Ingredients

Wet Ingredients

  • ½ cup unsalted butter
  • 1 cup light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Dry Ingredients

  • cups rolled oats
  • 1 cup white whole wheat flour
  • ½ teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • teaspoon salt
  • ½ cup white chocolate chips
  • ½ cup dried cranberries

Optional Toppings

  • to taste white chocolate chips
  • to taste sea salt

Instructions

  1. Preheat the oven to 350ºF and prepare a baking sheet.
  2. Cut the cold butter into tablespoon-sized pieces and place in a stand mixer.
  3. Add brown sugar and cream together until smooth, about 5 minutes.
  4. Lightly pulverize the rolled oats in a food processor and transfer to a large bowl.
  5. Add white whole wheat flour, baking powder, cinnamon, and salt to the oats and mix well.
  6. Once the butter and sugar are combined, add the egg and vanilla, mixing until combined.
  7. Slowly add the dry ingredients to the wet mixture and mix until a sticky dough forms.
  8. Fold in the white chocolate chips and dried cranberries.
  9. Scoop dough into 1.5 tablespoon portions, roll into balls, and slightly flatten.
  10. Place on the baking sheet and optionally add more white chocolate chips on top.
  11. Bake for 12-14 minutes until the bottoms are golden brown.
  12. Remove from the oven and transfer to a cooling rack, topping with sea salt if desired.
