Instructions
- Preheat the oven to 350ºF and prepare a baking sheet.
- Cut the cold butter into tablespoon-sized pieces and place in a stand mixer.
- Add brown sugar and cream together until smooth, about 5 minutes.
- Lightly pulverize the rolled oats in a food processor and transfer to a large bowl.
- Add white whole wheat flour, baking powder, cinnamon, and salt to the oats and mix well.
- Once the butter and sugar are combined, add the egg and vanilla, mixing until combined.
- Slowly add the dry ingredients to the wet mixture and mix until a sticky dough forms.
- Fold in the white chocolate chips and dried cranberries.
- Scoop dough into 1.5 tablespoon portions, roll into balls, and slightly flatten.
- Place on the baking sheet and optionally add more white chocolate chips on top.
- Bake for 12-14 minutes until the bottoms are golden brown.
- Remove from the oven and transfer to a cooling rack, topping with sea salt if desired.
