Ingredients

  • cup quick oats
  • 1 cup white whole wheat flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • pinch salt
  • ½ cup melted butter
  • ¾ cup coconut sugar
  • 1 egg
  • 1 tsp vanilla
  • ¼ tsp orange zest (optional)
  • ½ cup mini white chocolate chips
  • ½ cup dried cranberries

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, combine the oats, flour, baking powder, baking soda, and salt.
  3. In a separate bowl, cream together the melted butter, coconut sugar, egg, vanilla, and orange zest.
  4. Gradually add the wet mixture to the dry ingredients, stirring until well combined.
  5. Fold in the dried cranberries and mini white chocolate chips.
  6. Roll the dough into balls and slightly flatten them to form cookies.
  7. Bake in the preheated oven for 12-14 minutes.
  8. Allow to cool before serving.
