Ingredients

The cookie dough

  • ½ cup butter (softened)
  • ¼ cup brown sugar
  • ½ cup sugar
  • 1 large egg
  • ¼ tsp vanilla extract
  • ½ tsp baking soda
  • ¼ tsp sea salt (plus more for topping)
  • 1 heaping cup whole wheat pastry flour

Add-ins

  • ½ cup white chocolate chips or bar (chopped)
  • ½ cup dried cranberries (sweetened or unsweetened)

Instructions

  1. Preheat the oven to 375°F (190°C) and cream the softened butter in a large bowl.
  2. Add the brown and white sugars, beating until light and fluffy, scraping down the sides as needed.
  3. Mix in the egg, vanilla, and sea salt, and beat again.
  4. Sift in the whole wheat flour and baking soda, mixing until well combined.
  5. Fold in the white chocolate chips and dried cranberries, then chill the dough for 10 minutes.
  6. Shape the dough into rounded tablespoon balls, press them down slightly on a lined cookie sheet, and sprinkle with sea salt.
  7. Bake for 10-12 minutes, then let the cookies set on the sheet for 2-3 minutes before transferring them to a cooling rack.
