Ingredients

The dough

  • ¾ cup unsalted butter, softened to room temperature
  • ¾ cup packed light or dark brown sugar
  • ¼ cup granulated sugar
  • 1 large egg, at room temperature
  • 2 teaspoons pure vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • ½ teaspoon salt

The mix-ins

  • ¾ cup white chocolate chips, plus a few extra for garnish
  • 1 cup dried cranberries, plus a few extra for garnish

Instructions

  1. 1. Beat the butter, brown sugar, and granulated sugar until creamy.
  2. 2. Mix in the egg and vanilla, then scrape down the bowl and mix again.
  3. 3. In a separate bowl, whisk together the flour, cornstarch, baking soda, and salt.
  4. 4. Gradually mix the dry ingredients into the wet ingredients until combined.
  5. 5. Fold in the white chocolate chips and dried cranberries.
  6. 6. Chill the dough in the refrigerator for at least 1 hour.
  7. 7. Preheat the oven to 350°F (177°C) and prepare baking sheets.
  8. 8. Scoop and roll the dough into balls and place them on the baking sheets.
  9. 9. Bake for 11-12 minutes until the edges are lightly browned.
  10. 10. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
