Soft White Chocolate Chip Cranberry Cookies

Instructions
- 1. Beat the butter, brown sugar, and granulated sugar until creamy.
- 2. Mix in the egg and vanilla, then scrape down the bowl and mix again.
- 3. In a separate bowl, whisk together the flour, cornstarch, baking soda, and salt.
- 4. Gradually mix the dry ingredients into the wet ingredients until combined.
- 5. Fold in the white chocolate chips and dried cranberries.
- 6. Chill the dough in the refrigerator for at least 1 hour.
- 7. Preheat the oven to 350°F (177°C) and prepare baking sheets.
- 8. Scoop and roll the dough into balls and place them on the baking sheets.
- 9. Bake for 11-12 minutes until the edges are lightly browned.
- 10. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
