Instructions
- Preheat the oven to 356°F (180°C).
- In a bowl, combine the all-purpose flour, baking soda, and ground cinnamon, then set aside.
- In a stand mixer, beat the unsalted butter, light brown sugar, and white sugar until creamy.
- Add the eggs one at a time, mixing well after each addition, then add the vanilla extract.
- Gradually add the flour mixture and mix until combined.
- Fold in the oats, dried cranberries, and white chocolate chips with a spatula.
- Scoop 1 tablespoon of the dough and roll it into a ball, placing each on a baking sheet lined with parchment paper, about 1 inch apart.
- Bake for 9 to 10 minutes for chewy cookies or 12 to 15 minutes for crispy cookies.
- Transfer the cookies to a cooling rack and let them cool completely before serving.
