Ingredients

The dough

  • ¾ cup unsalted butter
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 cups old-fashioned oats
  • 1 teaspoon baking powder
  • ¾ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt

  • cups chopped dried cranberries

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a mixer, cream together the butter, granulated sugar, and brown sugar for 2 minutes until light and fluffy.
  3. Add the egg and vanilla extract, mixing for another 30 seconds.
  4. In a separate bowl, whisk together the flour, oats, baking powder, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the chopped cranberries.
  7. Using a cookie scoop, portion the dough into balls and place them on the prepared baking sheet, patting them down slightly.
  8. Bake for 15 to 18 minutes until lightly golden brown.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
