Oatmeal Cranberry Walnut Cookies

Ingredients

  • 1 cup old-fashioned rolled or quick oats
  • ½ cup whole wheat flour
  • ½ teaspoon ground cinnamon
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon coarse salt
  • 5 tablespoons melted butter
  • 2 tablespoons pure maple syrup
  • 2 tablespoons brown sugar
  • 1 large egg
  • ½ teaspoon pure vanilla extract
  • ¼ cup chopped walnuts
  • ¼ cup dried cranberries

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a bowl, whisk together oats, flour, cinnamon, baking powder, baking soda, and salt.
  3. In another bowl, whisk together melted butter, maple syrup, brown sugar, egg, and vanilla extract.
  4. Combine the dry ingredients with the wet ingredients and mix well.
  5. Fold in chopped walnuts and dried cranberries.
  6. Scoop 2-inch mounds of dough onto the baking sheet, spacing them apart.
  7. Press down slightly on the mounds with a fork to flatten them.
  8. Bake for 8-11 minutes until set but still soft.
  9. Allow to cool before serving.
