Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a bowl, whisk together oats, flour, cinnamon, baking powder, baking soda, and salt.
- In another bowl, whisk together melted butter, maple syrup, brown sugar, egg, and vanilla extract.
- Combine the dry ingredients with the wet ingredients and mix well.
- Fold in chopped walnuts and dried cranberries.
- Scoop 2-inch mounds of dough onto the baking sheet, spacing them apart.
- Press down slightly on the mounds with a fork to flatten them.
- Bake for 8-11 minutes until set but still soft.
- Allow to cool before serving.
