Chewy Cranberry Oatmeal Cookies

Ingredients

  • 1 cup unsalted butter
  • 1 ½ cups brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon table salt
  • 2 cups old fashioned rolled oats
  • 1 ½ cups dried cranberries

Instructions

  1. Preheat the oven to 350℉ and line a baking sheet with parchment paper.
  2. Cream the room-temperature butter and brown sugar in a large bowl until light and fluffy.
  3. Add the eggs and vanilla extract to the creamed mixture, whipping until light and fluffy.
  4. Mix in the flour, baking soda, salt, and cinnamon until fully combined.
  5. Fold in the oats and cranberries by hand until incorporated.
  6. Scoop about 2 tablespoons of dough for each cookie and place them on the prepared cookie sheet, spaced 2-3 inches apart.
  7. Bake in the preheated oven for 8-10 minutes or until slightly golden.
  8. Repeat the baking process until all dough is used, keeping the remaining dough refrigerated.
  9. Allow cookies to cool on the pan for 2-3 minutes before transferring them to a wire rack to cool completely.
