Chewy Cranberry Oatmeal Cookies

Instructions
- Preheat the oven to 350℉ and line a baking sheet with parchment paper.
- Cream the room-temperature butter and brown sugar in a large bowl until light and fluffy.
- Add the eggs and vanilla extract to the creamed mixture, whipping until light and fluffy.
- Mix in the flour, baking soda, salt, and cinnamon until fully combined.
- Fold in the oats and cranberries by hand until incorporated.
- Scoop about 2 tablespoons of dough for each cookie and place them on the prepared cookie sheet, spaced 2-3 inches apart.
- Bake in the preheated oven for 8-10 minutes or until slightly golden.
- Repeat the baking process until all dough is used, keeping the remaining dough refrigerated.
- Allow cookies to cool on the pan for 2-3 minutes before transferring them to a wire rack to cool completely.
