Ingredients

Dry ingredients

  • 1 cup whole wheat flour
  • cups rolled oats
  • 1 cup almond meal
  • ½ cup golden flaxseed, ground
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt

Wet ingredients

  • 3 large eggs
  • ¾ cup buttermilk
  • ½ cup unsweetened apple sauce
  • ¼ cup orange juice
  • 2 tbsp coconut oil, melted
  • 1 tsp pure vanilla extract
  • 1 each grated zest of 1 orange
  • 5-6 drops orange essential oil (optional)

Add-ins

  • 1 cup dried cranberries
  • ½ cup unsweetened shredded coconut
  • ½ cup pecans, chopped

Instructions

  1. Preheat the oven to 375°F.
  2. In a large bowl, whisk together all dry ingredients and set aside.
  3. In a separate bowl, mix all wet ingredients until fully combined.
  4. Pour the wet mixture over the dry ingredients and mix gently until just combined.
  5. Stir in the dried cranberries, shredded coconut, and chopped pecans.
  6. Scoop about 3 tbsp of dough per cookie onto a lined cookie sheet.
  7. Bake for 10 minutes, then gently flatten the tops with a fork and bake for another 2 minutes.
  8. Transfer cookies to a cooling rack and let cool completely.
  9. Store uneaten cookies in an airtight container in the refrigerator for up to a week.
