Instructions
- Preheat the oven to 375°F.
- In a large bowl, whisk together all dry ingredients and set aside.
- In a separate bowl, mix all wet ingredients until fully combined.
- Pour the wet mixture over the dry ingredients and mix gently until just combined.
- Stir in the dried cranberries, shredded coconut, and chopped pecans.
- Scoop about 3 tbsp of dough per cookie onto a lined cookie sheet.
- Bake for 10 minutes, then gently flatten the tops with a fork and bake for another 2 minutes.
- Transfer cookies to a cooling rack and let cool completely.
- Store uneaten cookies in an airtight container in the refrigerator for up to a week.
