Instructions
- Whisk together flour, cornstarch, baking soda, and salt in a bowl.
- Beat butter until smooth, then mix in brown sugar and granulated sugar until fluffy.
- Add egg, vanilla, and peppermint extracts, and mix well.
- Gradually combine dry ingredients with wet ingredients, then fold in white chocolate chips and crushed candy canes.
- Chill the dough for at least 2 hours or up to 3 days.
- Preheat the oven and prepare baking sheets.
- Roll the chilled dough into balls and place on the baking sheets.
- Bake until lightly golden, then cool on the baking sheets for a few minutes before transferring to a rack.
- Melt the chopped white chocolate and drizzle over the cooled cookies.
