Ingredients

The cookie dough

  • 2 cups all-purpose flour
  • 1 teaspoon cornstarch
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup unsalted butter
  • ½ cup packed light brown sugar
  • ½ cup granulated sugar
  • 1 large egg
  • teaspoons pure vanilla extract
  • ¾ teaspoon peppermint extract
  • ¾ cup white chocolate chips
  • ½ cup crushed candy cane pieces

For drizzling

  • 4 ounces white chocolate

Instructions

  1. Whisk together flour, cornstarch, baking soda, and salt in a bowl.
  2. Beat butter until smooth, then mix in brown sugar and granulated sugar until fluffy.
  3. Add egg, vanilla, and peppermint extracts, and mix well.
  4. Gradually combine dry ingredients with wet ingredients, then fold in white chocolate chips and crushed candy canes.
  5. Chill the dough for at least 2 hours or up to 3 days.
  6. Preheat the oven and prepare baking sheets.
  7. Roll the chilled dough into balls and place on the baking sheets.
  8. Bake until lightly golden, then cool on the baking sheets for a few minutes before transferring to a rack.
  9. Melt the chopped white chocolate and drizzle over the cooled cookies.
