Ingredients

  • cups blanched almond flour
  • ¼ cup cacao powder
  • ¼ teaspoon celtic sea salt
  • ½ teaspoon baking soda
  • 2 large eggs
  • 2 tablespoons coconut oil
  • ¼ cup honey or maple syrup
  • ¼ teaspoon vanilla stevia
  • ¾ cup grated zucchini

Instructions

  1. Combine almond flour and cacao powder in a food processor.
  2. Pulse in salt and baking soda.
  3. Add eggs, coconut oil, honey, and stevia, then pulse to combine.
  4. Briefly pulse in the grated zucchini.
  5. Transfer the batter to a parchment-lined small loaf pan.
  6. Bake at 350°F for 35-40 minutes.
  7. Cool for 2 hours before serving.
