Ingredients

  • 2 ½ cups blanched almond flour
  • 1 teaspoon ground cinnamon
  • ½ teaspoon celtic sea salt
  • ½ teaspoon baking soda
  • 4 large eggs
  • 2 tablespoons maple syrup
  • ½ teaspoon vanilla stevia
  • 1 ½ cups grated zucchini

Instructions

  1. Combine almond flour, cinnamon, salt, and baking soda in a food processor.
  2. Pulse in eggs, maple syrup, and stevia.
  3. Remove the s-blade and stir in the grated zucchini by hand.
  4. Transfer the batter to a greased 9 x 5 inch loaf dish.
  5. Bake at 350°F for 1 hour.
  6. Cool for 1 hour before serving.
