Ingredients

Dry Ingredients

  • cups all-purpose flour
  • ¾ cup whole wheat flour
  • cup unsweetened cocoa powder
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon sea salt
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg

Wet Ingredients

  • 3 large eggs
  • cups almond milk
  • ¼ cup vegetable oil or melted coconut oil
  • cup maple syrup
  • 2 teaspoons vanilla extract

Main Ingredients

  • 2 cups shredded zucchini
  • 1 cup semisweet chocolate chips
  • to taste sea salt (for sprinkling)

Instructions

  1. Preheat the oven to 350°F and prepare two 8x4” loaf pans with nonstick spray.
  2. In a medium bowl, whisk together the dry ingredients.
  3. In a large bowl, whisk together the wet ingredients and then stir in the zucchini.
  4. Combine the dry ingredients with the wet ingredients and stir until just combined.
  5. Fold in the chocolate chips.
  6. Pour the batter into the prepared loaf pans, sprinkle with more chocolate chips, and bake for 50 to 60 minutes.
  7. Check for doneness with a toothpick; it should come out clean.
  8. Allow the loaves to cool completely before removing from the pans.
