Chocolate Zucchini Bread

Ingredients

  • 1 ¼ cups all purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon
  • ¼ cup cocoa powder
  • ¾ cup granulated sugar
  • 1 large egg
  • 3 tablespoons butter, melted
  • 3 tablespoons vegetable oil
  • 1 teaspoon vanilla extract
  • 2 cups finely grated zucchini, drained
  • 1 cup semisweet chocolate chips, divided
  • 1 spray cooking spray

Instructions

  1. Preheat the oven to 350°F and coat a loaf pan with cooking spray.
  2. In a large bowl, mix the flour, cocoa powder, baking soda, salt, and cinnamon.
  3. In a medium bowl, mix the sugar and egg until smooth, then add the melted butter, vegetable oil, and vanilla extract.
  4. Stir in the grated zucchini to the wet mixture until combined.
  5. Combine the wet and dry ingredients gently until just mixed.
  6. Toss ¾ cup of chocolate chips in a teaspoon of flour and fold them into the batter.
  7. Pour the batter into the prepared loaf pan and sprinkle the remaining chocolate chips on top.
  8. Bake for 50 to 55 minutes until a toothpick comes out clean.
  9. Cool the bread for 15 minutes in the pan, then invert onto a plate and cool for another 15 minutes before slicing.
