Ingredients

Wet Ingredients

  • ¼ cup butter, softened
  • ¼ cup oil
  • ¾ cup brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs

Dry Ingredients

  • 1 cup whole wheat pastry flour
  • 1 cup dark chocolate cocoa powder
  • ¼ teaspoon coarse salt
  • 2 teaspoons baking powder
  • 2 cups grated zucchini
  • ½ cup dark chocolate chips
  • 2 tablespoons dark chocolate chips

Instructions

  1. Preheat the oven to 350°F and prepare a loaf tin with grease and flour.
  2. In a stand mixer, cream together butter, oil, brown sugar, and vanilla until fluffy, then add eggs one at a time.
  3. In a separate bowl, whisk together flour, cocoa powder, salt, and baking powder.
  4. Gradually mix the dry ingredients into the wet ingredients until just combined, then fold in zucchini and ½ cup of chocolate chips.
  5. Transfer the batter to the loaf tin and top with the remaining chocolate chips.
  6. Bake for 45-55 minutes until a toothpick comes out almost clean.
  7. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  8. Slice and serve.
