Instructions
- Preheat the oven to 350°F and prepare a loaf tin with grease and flour.
- In a stand mixer, cream together butter, oil, brown sugar, and vanilla until fluffy, then add eggs one at a time.
- In a separate bowl, whisk together flour, cocoa powder, salt, and baking powder.
- Gradually mix the dry ingredients into the wet ingredients until just combined, then fold in zucchini and ½ cup of chocolate chips.
- Transfer the batter to the loaf tin and top with the remaining chocolate chips.
- Bake for 45-55 minutes until a toothpick comes out almost clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Slice and serve.
