Ingredients

  • cups white whole wheat flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ cup raw honey
  • ½ cup unsweetened applesauce
  • cup coconut oil, melted
  • 1 large egg
  • 2 teaspoons vanilla extract
  • cups grated zucchini
  • ¾ cup dark chocolate chips
  • cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F.
  2. Grease and flour an 8x4 inch loaf pan.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. In a large bowl, whisk together the honey, applesauce, melted coconut oil, egg, and vanilla until smooth.
  5. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  6. Squeeze the grated zucchini to remove excess liquid and fold it into the batter along with the chocolate chips and walnuts.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 45-50 minutes or until a toothpick inserted comes out clean.
  9. Let cool before serving.
