Instructions
- Preheat the oven to 350°F.
- Grease and flour an 8x4 inch loaf pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a large bowl, whisk together the honey, applesauce, melted coconut oil, egg, and vanilla until smooth.
- Gradually add the dry ingredients to the wet ingredients and mix until combined.
- Squeeze the grated zucchini to remove excess liquid and fold it into the batter along with the chocolate chips and walnuts.
- Pour the batter into the prepared loaf pan.
- Bake for 45-50 minutes or until a toothpick inserted comes out clean.
- Let cool before serving.
