Instructions
- 1. Preheat the oven to 350°F (175°C).
- 2. Coat a glass loaf pan with coconut oil or cooking spray.
- 3. In a large bowl, combine the flour, salt, baking soda, cinnamon, and sugar. Set aside.
- 4. In a medium bowl, mix the eggs, melted coconut oil, and vanilla extract. Gently stir in the grated zucchini and chocolate chips.
- 5. Add the wet mixture to the dry mixture and stir until just combined.
- 6. Pour the batter into the prepared loaf pan and bake for 1 hour, or until a toothpick inserted in the center comes out clean.
- 7. Allow to cool before slicing and serving.
