Ingredients

  • 2 cups whole-wheat pastry flour
  • ½ tsp kosher salt
  • tsp baking soda
  • 1 tsp cinnamon
  • ¾ cup turbinado sugar
  • 2 large eggs
  • cup melted coconut oil
  • 1 tsp vanilla extract
  • cups grated zucchini
  • ½ cup chocolate chips

Instructions

  1. 1. Preheat the oven to 350°F (175°C).
  2. 2. Coat a glass loaf pan with coconut oil or cooking spray.
  3. 3. In a large bowl, combine the flour, salt, baking soda, cinnamon, and sugar. Set aside.
  4. 4. In a medium bowl, mix the eggs, melted coconut oil, and vanilla extract. Gently stir in the grated zucchini and chocolate chips.
  5. 5. Add the wet mixture to the dry mixture and stir until just combined.
  6. 6. Pour the batter into the prepared loaf pan and bake for 1 hour, or until a toothpick inserted in the center comes out clean.
  7. 7. Allow to cool before slicing and serving.
