Ingredients

Wet Ingredients

  • cup honey
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1 very ripe banana
  • ¾ cup zucchini, shredded

Dry Ingredients

  • 1 ¾ cups blanched almond flour
  • 2 teaspoons cinnamon
  • ¾ teaspoon baking soda
  • ½ teaspoon nutmeg
  • ½ teaspoon salt
  • ¾ cup dark chocolate chips

Instructions

  1. Preheat the oven to 350°F and grease a 9x4 loaf pan.
  2. In a stand mixer, beat the wet ingredients including banana and zucchini until well combined.
  3. In a separate bowl, mix the dry ingredients together.
  4. Combine the dry ingredients with the wet ingredients and stir until well mixed.
  5. Fold in the chocolate chips.
  6. Transfer the mixture to the greased loaf pan and sprinkle extra chocolate chips on top.
  7. Bake for 30-35 minutes or until a toothpick comes out clean from the center.
  8. Let cool completely before slicing.
