Instructions
- 1. Preheat the oven to 350°F and grease a bread pan, optionally lining it with parchment paper.
- 2. In a small bowl, mix the flour, baking soda, salt, cinnamon, and nutmeg.
- 3. In a larger bowl, whisk the eggs, then add the melted coconut oil, maple syrup, Greek yogurt, and vanilla extract.
- 4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- 5. Fold in the grated zucchini and chocolate chips, being careful not to overmix.
- 6. Pour the mixture into the prepared bread pan and sprinkle additional chocolate chips on top if desired.
- 7. Bake for 45-50 minutes or until a toothpick inserted comes out clean.
