Ingredients

  • cups white whole wheat flour
  • 1 tsp baking soda

  • ¼ tsp nutmeg
  • 2 large eggs
  • ¾ cup melted coconut oil
  • ½ cup maple syrup
  • ½ cup Greek yogurt
  • 1 tsp vanilla extract
  • cups grated zucchini
  • 1 cup chocolate chips

Instructions

  1. 1. Preheat the oven to 350°F and grease a bread pan, optionally lining it with parchment paper.
  2. 2. In a small bowl, mix the flour, baking soda, salt, cinnamon, and nutmeg.
  3. 3. In a larger bowl, whisk the eggs, then add the melted coconut oil, maple syrup, Greek yogurt, and vanilla extract.
  4. 4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. 5. Fold in the grated zucchini and chocolate chips, being careful not to overmix.
  6. 6. Pour the mixture into the prepared bread pan and sprinkle additional chocolate chips on top if desired.
