Ingredients

Dry Ingredients

  • 1 cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon sea salt

Wet Ingredients

  • 2 large eggs (room temperature)
  • ¼ cup unsalted butter (melted and slightly cooled)
  • ¼ cup vegetable oil
  • ¾ cup light brown sugar (packed)
  • 1 teaspoon vanilla extract
  • 1 ½ cups shredded zucchini (packed)

Chocolate Chips

  • 1 cup semisweet chocolate chips (or your choice of chocolate chips)

Instructions

  1. Preheat the oven to 350°F and butter a 9-by-5-inch loaf pan.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and sea salt.
  3. In a large bowl, mix the eggs, melted butter, vegetable oil, vanilla extract, and brown sugar until smooth.
  4. Add the dry ingredients to the wet ingredients and mix just enough to blend without overmixing.
  5. Fold in the shredded zucchini until just combined.
  6. Add ¾ cup of chocolate chips and mix gently.
  7. Pour the batter into the prepared loaf pan and top with the remaining chocolate chips.
  8. Bake for 50-60 minutes, or until a toothpick inserted comes out mostly clean.
  9. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
