Instructions
- Preheat the oven to 350°F and butter a 9-by-5-inch loaf pan.
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, and sea salt.
- In a large bowl, mix the eggs, melted butter, vegetable oil, vanilla extract, and brown sugar until smooth.
- Add the dry ingredients to the wet ingredients and mix just enough to blend without overmixing.
- Fold in the shredded zucchini until just combined.
- Add ¾ cup of chocolate chips and mix gently.
- Pour the batter into the prepared loaf pan and top with the remaining chocolate chips.
- Bake for 50-60 minutes, or until a toothpick inserted comes out mostly clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
