Ingredients

  • 1 tsp baking soda
  • ¾ tsp kosher salt

Add-ins

  • 2 cup grated zucchini
  • 1 cup pecans, chopped
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F and prepare a loaf pan with cooking spray.
  2. Beat cream cheese and sugar until well blended, then add eggs one at a time.
  3. Mix in canola oil and vanilla extract.
  4. In a separate bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt.
  5. Combine the dry ingredients with the wet mixture, then fold in zucchini, pecans, and chocolate chips.
  6. Spread the batter into the prepared pan and bake for 55-65 minutes until edges pull away from the pan.
  7. Cool for 30 minutes before removing from the pan.
