Instructions
- Preheat the oven to 350°F and prepare an 8x8 baking pan with parchment paper and non-stick spray.
- In a large bowl, whisk together the eggs and maple syrup.
- Add the coconut oil, almond butter, and vanilla to the mixture and whisk until combined.
- In a separate bowl, mix the almond flour, baking soda, salt, and cocoa powder.
- Combine the dry ingredients with the wet ingredients and stir until well mixed.
- Fold in the shredded zucchini and chocolate chips.
- Pour the mixture into the prepared baking dish and sprinkle additional chocolate chips on top if desired.
- Bake for 24-28 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool before cutting and store in the refrigerator.
