Ingredients

  • ¾ cup salted butter
  • 1 cup chopped semisweet chocolate or chocolate chips
  • ¼ cup natural unsweetened cocoa powder
  • ½ cup packed light brown sugar
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg yolk
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • 2 cups finely shredded zucchini (wrung dry)
  • 1 ¼ cups all-purpose flour
  • 2 cups chocolate chips or chunks

Instructions

  1. Preheat the oven to 350°F and prepare a 9x13-inch pan.
  2. Melt the butter, chocolate chips, and cocoa in a microwave-safe bowl or on the stovetop until smooth.
  3. Mix in the brown sugar and granulated sugar until combined.
  4. Add the vanilla and egg yolk, mixing until well combined.
  5. Stir in the baking soda and salt.
  6. Incorporate the shredded zucchini until evenly mixed.
  7. Add the flour and one cup of chocolate chips, stirring until just combined.
  8. Spread the batter in the prepared pan and sprinkle the remaining chocolate chips on top.
  9. Bake for 25-30 minutes until the edges are set and the center is soft.
  10. Let cool in the pan before cutting into squares.
