Zucchini Brownies

Ingredients

  • 2 cups zucchini, grated
  • ½ cup coconut oil, melted and cooled
  • ½ cup pure maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ¾ cups whole wheat pastry flour
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon kosher salt
  • 1 ½ teaspoons baking powder
  • ½ teaspoon ground cinnamon
  • teaspoon nutmeg
  • 8 ounces chopped dark chocolate or dark chocolate chips

Instructions

  1. Preheat the oven to 350°F and prepare an 8x8 inch baking pan.
  2. Grate the zucchini and lightly pat it to remove some moisture.
  3. In a large bowl, mix together the coconut oil, eggs, maple syrup, and vanilla. Stir in the zucchini.
  4. In another bowl, combine the flour, cocoa, salt, baking powder, cinnamon, and nutmeg.
  5. Add the dry ingredients to the wet mixture and stir to combine. Fold in the chocolate.
  6. Pour the batter into the prepared pan and bake for 30-35 minutes.
  7. Allow to cool completely before removing from the pan.
