Instructions
- Preheat the oven to 325°F and prepare an 8x8-inch baking dish with parchment paper.
- In a small bowl, mix the ground flaxseed with water and let it sit for 5 minutes to thicken.
- In a medium bowl, whisk together the flour, sugar, cocoa powder, baking powder, and salt.
- In a large bowl, combine the melted coconut oil, vanilla extract, and flaxseed mixture, then stir in the grated zucchini.
- Add the dry ingredients to the wet mixture and stir to combine. Let the batter rest for 1 minute.
- After resting, stir the batter again until smooth, then fold in the chocolate chips.
- Transfer the batter to the prepared baking dish, smooth the top, and sprinkle with additional chocolate chips and flaky sea salt if desired.
- Bake for 45 to 50 minutes until set, then allow to cool in the pan for at least an hour before slicing.
