Zucchini Brownies

Ingredients

  • 2 tablespoons ground flaxseed
  • 5 tablespoons water
  • cups all-purpose flour
  • 1 cup granulated sugar
  • cup cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon sea salt
  • ½ cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 2 cups grated zucchini
  • ½ cup dark chocolate chips
  • to taste optional flaky sea salt

Instructions

  1. Preheat the oven to 325°F and prepare an 8x8-inch baking dish with parchment paper.
  2. In a small bowl, mix the ground flaxseed with water and let it sit for 5 minutes to thicken.
  3. In a medium bowl, whisk together the flour, sugar, cocoa powder, baking powder, and salt.
  4. In a large bowl, combine the melted coconut oil, vanilla extract, and flaxseed mixture, then stir in the grated zucchini.
  5. Add the dry ingredients to the wet mixture and stir to combine. Let the batter rest for 1 minute.
  6. After resting, stir the batter again until smooth, then fold in the chocolate chips.
  7. Transfer the batter to the prepared baking dish, smooth the top, and sprinkle with additional chocolate chips and flaky sea salt if desired.
  8. Bake for 45 to 50 minutes until set, then allow to cool in the pan for at least an hour before slicing.
