Ingredients

  • 1 cup Zucchini (shredded)
  • 1 ½ cups Blanched Almond Flour
  • cup Dutch processed cocoa powder
  • 1 tsp Baking powder
  • ¼ tsp Sea salt
  • ½ cup Maple Syrup
  • cup Coconut oil (melted)
  • 2 large Eggs
  • 2 tsp Vanilla extract
  • 1 cup ChocZero Sugar-Free Dark Chocolate Chips

Instructions

  1. Preheat the oven and line a baking pan with parchment paper.
  2. Shred the zucchini and squeeze out excess moisture, measuring 1 cup after squeezing.
  3. In a large bowl, mix the almond flour, cocoa powder, baking powder, and salt.
  4. In a separate bowl, whisk together the maple syrup, melted coconut oil, eggs, and vanilla.
  5. Combine the dry ingredients with the wet ingredients, then fold in the zucchini and chocolate chips.
  6. Pour the batter into the prepared pan and smooth it out. Optionally, top with more chocolate chips.
  7. Bake for 25-30 minutes, checking for doneness with a toothpick.
  8. Let the brownies cool completely before slicing.
