Instructions
- Preheat the oven and line a baking pan with parchment paper.
- Shred the zucchini and squeeze out excess moisture, measuring 1 cup after squeezing.
- In a large bowl, mix the almond flour, cocoa powder, baking powder, and salt.
- In a separate bowl, whisk together the maple syrup, melted coconut oil, eggs, and vanilla.
- Combine the dry ingredients with the wet ingredients, then fold in the zucchini and chocolate chips.
- Pour the batter into the prepared pan and smooth it out. Optionally, top with more chocolate chips.
- Bake for 25-30 minutes, checking for doneness with a toothpick.
- Let the brownies cool completely before slicing.
