Ingredients

  • 1 medium zucchini
  • 1 cup whole wheat pastry flour

  • ¼ teaspoon salt
  • 2 large eggs
  • ½ cup honey
  • 3 tablespoons coconut oil
  • 1 tablespoon vanilla extract
  • ½ cup chocolate chips

Instructions

  1. Preheat the oven to 350°F.
  2. Shred the zucchini and set aside without squeezing out the moisture.
  3. In a medium bowl, mix the flour, cocoa powder, baking powder, and salt.
  4. In a large bowl, whisk the eggs and honey for about a minute, then add the melted coconut oil and vanilla extract.
  5. Combine the dry ingredients with the wet ingredients and mix until just combined.
  6. Fold in the shredded zucchini and chocolate chips.
  7. Pour the batter into a lined or greased 9x9 baking pan.
  8. Bake for 30 to 32 minutes, or until a toothpick comes out clean.
  9. Let the brownies cool completely before cutting into squares.
