Instructions
- Preheat the oven to 350°F.
- Shred the zucchini and set aside without squeezing out the moisture.
- In a medium bowl, mix the flour, cocoa powder, baking powder, and salt.
- In a large bowl, whisk the eggs and honey for about a minute, then add the melted coconut oil and vanilla extract.
- Combine the dry ingredients with the wet ingredients and mix until just combined.
- Fold in the shredded zucchini and chocolate chips.
- Pour the batter into a lined or greased 9x9 baking pan.
- Bake for 30 to 32 minutes, or until a toothpick comes out clean.
- Let the brownies cool completely before cutting into squares.
