Ingredients

Cauliflower Steaks

  • 1 large head cauliflower
  • 1 Tbsp coconut or olive oil
  • ¼ tsp sea salt
  • tsp shawarma spice blend
  • 2 tsp maple syrup

Green Chutney

  • 1 bunch fresh cilantro
  • 3 cloves garlic
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 large lime
  • 1 Tbsp sweetener (such as maple syrup)
  • 1-2 Tbsp water
  • ½ medium avocado (optional)

Instructions

  1. Preheat the oven to 400°F (204°C) and slice the cauliflower into 1-inch steaks.
  2. Place the cauliflower steaks on a baking sheet and rub with oil, sea salt, maple syrup, and shawarma spice blend.
  3. Bake for 20-25 minutes, flipping halfway through until tender and browned.
  4. Prepare the chutney by blending cilantro, garlic, salt, pepper, lime juice, sweetener, and water in a food processor.
  5. Adjust the flavor of the chutney as needed and serve with the cauliflower steaks.
