Instructions
- Preheat the oven to 425°F with a rack in the upper third and line a baking sheet with parchment paper.
- Remove green leaves from the cauliflower and slice off the base for stability.
- Slice the cauliflower into 1-inch thick slabs, allowing some florets to fall off.
- Brush both sides of the slabs with olive oil and place them on the baking sheet, then sprinkle with salt and pepper.
- Roast in the oven for about 30 to 35 minutes until golden on the top and deeply golden underneath.
