Ingredients

  • 1 pound green beans, trimmed and cut in half, blanched
  • 3 tablespoons vegan butter
  • 8 oz baby bella or white mushrooms, sliced
  • ½ medium red onion, finely diced
  • ½ to ¾ teaspoon sea salt
  • ¼ teaspoon ground black pepper
  • 5 cloves garlic, minced
  • 2 tablespoons flour
  • 1 cup vegetable broth
  • ¾ cup coconut milk
  • 6 oz crispy fried onions

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. Blanch the green beans in salted boiling water for 2-3 minutes, then cool in cold water and set aside.
  3. In a skillet, melt the vegan butter over medium-high heat and add the mushrooms, onion, garlic, salt, and pepper. Cook for about 7 minutes until fragrant.
  4. Sprinkle flour over the mixture and stir until smooth. Add coconut milk and vegetable broth, mixing vigorously.
  5. Bring the mixture to a boil, then reduce heat and simmer until the sauce thickens, about 5 minutes.
  6. Stir in the blanched green beans and let them absorb the flavors for about 3 minutes.
  7. Top the mixture with crispy fried onions and bake for 20-25 minutes.
  8. Remove from the oven and let cool slightly before serving.
