Vegan Green Bean Casserole

Instructions
- Preheat the oven to 350°F (180°C).
- Blanch the green beans in salted boiling water for 2-3 minutes, then cool in cold water and set aside.
- In a skillet, melt the vegan butter over medium-high heat and add the mushrooms, onion, garlic, salt, and pepper. Cook for about 7 minutes until fragrant.
- Sprinkle flour over the mixture and stir until smooth. Add coconut milk and vegetable broth, mixing vigorously.
- Bring the mixture to a boil, then reduce heat and simmer until the sauce thickens, about 5 minutes.
- Stir in the blanched green beans and let them absorb the flavors for about 3 minutes.
- Top the mixture with crispy fried onions and bake for 20-25 minutes.
- Remove from the oven and let cool slightly before serving.
