Ingredients

The casserole

  • 2 lbs frozen green beans
  • 1 tbsp extra virgin olive oil
  • 4 cloves garlic, minced
  • 16 oz sliced mushrooms, chopped
  • 1 tbsp soy sauce
  • ¼ cup dry white wine
  • tsp fine sea salt
  • to taste freshly ground black pepper
  • a pinch ground nutmeg (optional)

The onion topping

  • 3 medium onions, divided
  • 3 tbsp bread crumbs
  • 3 tbsp all purpose flour
  • ¾ tsp fine sea salt

The cream sauce

  • ½ cup raw cashews

Instructions

  1. Soak cashews in hot water for 30 minutes.
  2. Preheat oven to 400°F and prepare a baking sheet.
  3. Slice two onions and mix with bread crumbs, flour, and salt; bake for 20-25 minutes.
  4. Boil green beans until tender, then drain and cool.
  5. Sauté diced onion in oil, add garlic and mushrooms, then season with soy sauce, wine, nutmeg, salt, and pepper.
  6. Blend soaked cashews with water until smooth, then mix with mushroom mixture and green beans.
  7. Transfer to a baking dish, top with crispy onions, and bake at 350°F for 20 minutes.
