Ingredients

The casserole

  • 1 teaspoon extra virgin olive oil
  • 1 medium yellow onion, chopped
  • 1 pound fresh or frozen green beans, cut into 1-inch pieces
  • 1 15 oz. can white beans, drained and rinsed
  • ½ to ¾ cups water
  • 1 clove garlic
  • 1 teaspoon salt
  • 1 sprig fresh rosemary
  • 1 teaspoon fresh lemon juice
  • to taste freshly ground black pepper

The topping

  • ¾ cup raw walnuts (or pecans, almonds, etc.)
  • ¼ teaspoon salt

Instructions

  1. Preheat the oven to 350ºF.
  2. Heat olive oil in a deep sauté pan and sauté the onion until softened.
  3. Add green beans and salt, cover, and cook until heated through.
  4. Blend the drained white beans, water, garlic, salt, rosemary, black pepper, and lemon juice until smooth.
  5. Pulse walnuts and salt in a food processor until coarsely ground.
  6. Pour the sauce over the green beans, stir well, and transfer to an oven-safe dish.
  7. Sprinkle the walnut topping over the casserole.
  8. Bake for 30 minutes until hot and the topping is golden.
  9. Let cool for 10 to 15 minutes before serving.
