Instructions
- Process the almonds, cocoa powder, and salt in a food processor until fine.
- Add the dates and vanilla extract, processing until a sticky dough forms.
- Shape the dough into a rectangle on parchment paper, about ¼-inch thick, and freeze for 20 minutes.
- Cut the dough into 8 rectangular cookies and return them to the freezer.
- Blend the frozen bananas, vanilla extract, and water in the food processor until smooth and creamy.
- Remove the cookies from the freezer and place ice cream on four of them.
- Top with the remaining cookies to form sandwiches and press together.
- Freeze the sandwiches for 20-30 minutes to solidify before serving.
