The Ice Cream

to taste
dairy-free chocolate ice cream (homemade or store-bought)
Instructions
- Preheat the oven to 350°F (175°C).
- In a small bowl, mix applesauce and vanilla liquid stevia with an electric mixer.
- In another bowl, combine almond meal, cocoa powder, arrowroot flour, coconut sugar, and baking soda.
- Combine the wet and dry ingredients until sticky.
- Scoop the dough onto parchment paper, roll out, and cut into squares to make cookies.
- Bake for about 15 minutes.
- Cool the cookies and freeze them before adding ice cream.
- Soften the ice cream before assembling the sandwiches.
- Assemble the sandwiches and enjoy immediately or freeze for later.
