Instructions
- Melt the chocolate in a bowl over simmering water, ensuring the bowl is clean and dry.
- Line baking sheets with parchment paper and drop about 1/4 teaspoon of melted chocolate onto the sheets, spreading it into larger circles.
- Cool the chocolate disks completely at room temperature or in the refrigerator.
- Scoop small balls of ice cream and place them on a chilled plate, then freeze the plate.
- Once the ice cream has softened slightly, place it between two chocolate disks to form sandwiches.
- Refreeze the sandwiches until ready to serve.
