Brownie Ice Cream Sandwiches

Instructions
- Preheat the oven to 350°F (177°C) and line two 9-inch square baking pans with parchment paper.
- Melt the butter and whisk in the sugar, eggs, and vanilla until combined.
- Add cocoa powder, flour, salt, and baking powder, and mix until a thick batter forms.
- Spread half of the batter into one prepared pan and bake for 15-16 minutes.
- Cool the first batch for 5 minutes, then lift it out using the parchment paper.
- Repeat the process with the remaining batter in the second pan.
- Scoop softened ice cream onto the first brownie layer and spread evenly.
- Place the second brownie layer on top of the ice cream and press down gently.
- Cover and freeze for at least 12 hours.
- Cut into squares or rectangles and serve.
