Ingredients

The brownies

  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 3 large eggs
  • 1 Tablespoon pure vanilla extract
  • 1 cup unsweetened natural or dutch-process cocoa powder
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • ¾ teaspoon baking powder

The ice cream

  • 2 quarts vanilla ice cream

Instructions

  1. Preheat the oven to 350°F (177°C) and line two 9-inch square baking pans with parchment paper.
  2. Melt the butter and whisk in the sugar, eggs, and vanilla until combined.
  3. Add cocoa powder, flour, salt, and baking powder, and mix until a thick batter forms.
  4. Spread half of the batter into one prepared pan and bake for 15-16 minutes.
  5. Cool the first batch for 5 minutes, then lift it out using the parchment paper.
  6. Repeat the process with the remaining batter in the second pan.
  7. Scoop softened ice cream onto the first brownie layer and spread evenly.
  8. Place the second brownie layer on top of the ice cream and press down gently.
  9. Cover and freeze for at least 12 hours.
  10. Cut into squares or rectangles and serve.
