Brownie Ice Cream Sandwiches

Ingredients

  • 2 cups dairy-free ice cream
  • 4 whole simple vegan brownies

Instructions

  1. Soften the ice cream by removing it from the freezer.
  2. Cut the brownies in half gently using a serrated knife.
  3. Line a ½ cup measuring cup with plastic wrap and pack it with softened ice cream, then fold the wrap over and remove it from the cup.
  4. Shape the ice cream into a disc and place it in the freezer.
  5. Repeat the process until you have four discs of ice cream and freeze them for 15 minutes until slightly hardened.
  6. Unwrap the ice cream discs and place them on top of the brownie halves.
  7. Top with the other brownie halves and gently squeeze to form a sandwich.
  8. Serve immediately or wrap and store in a freezer-safe bag or container.
