Brownie Ice Cream Sandwiches

Instructions
- Soften the ice cream by removing it from the freezer.
- Cut the brownies in half gently using a serrated knife.
- Line a ½ cup measuring cup with plastic wrap and pack it with softened ice cream, then fold the wrap over and remove it from the cup.
- Shape the ice cream into a disc and place it in the freezer.
- Repeat the process until you have four discs of ice cream and freeze them for 15 minutes until slightly hardened.
- Unwrap the ice cream discs and place them on top of the brownie halves.
- Top with the other brownie halves and gently squeeze to form a sandwich.
- Serve immediately or wrap and store in a freezer-safe bag or container.
