Instructions
- Prepare the Cashew Butter Cookies according to the recipe, making about 24 cookies.
- Cool the cookies on a baking sheet for 10 minutes, then transfer to a cooling rack.
- Once cooled, prepare the banana ice cream by cutting the bananas into small pieces.
- Blend the bananas with nut butter and water until smooth, adding more water if necessary.
- Arrange 6 to 12 cookies bottom-side-up on a plate or baking sheet.
- Scoop banana ice cream onto each cookie and top with another cookie to form a sandwich.
- Freeze the sandwiches for at least 1 hour to firm up before serving.
- Optionally, dip half of the frozen cookies in melted dark chocolate and sprinkle with crushed nuts.
