Vegan Cookie Dough Ice Cream

The cookie dough

walnuts (or other nut/seed)

soft Medjool dates, pitted

vanilla extract

mini chocolate chips
The ice cream

frozen bananas, cut into coins

tablespoons
water
Instructions
- Process the walnuts in a mini food processor until finely ground.
- Add the dates, vanilla, and sea salt, and process until a sticky dough forms.
- Stir in the mini chocolate chips and drop the dough by rounded tablespoons onto a parchment-lined plate.
- Freeze the dough balls for at least an hour until firm.
- For the banana soft serve, blend 1 or 2 frozen bananas with 1 to 2 tablespoons of water until smooth.
- Crumble a couple of the frozen cookie dough chunks into the banana mixture.
- Stir well and serve immediately.
