Ingredients

The cookie dough

  • ½ cup walnuts (or other nut/seed)
  • 3 pieces soft Medjool dates, pitted
  • ¼ teaspoon vanilla extract
  • a pinch sea salt
  • 1 tablespoon mini chocolate chips

The ice cream

  • 2-4 pieces frozen bananas, cut into coins
  • 1-2 tablespoons water

Instructions

  1. Process the walnuts in a mini food processor until finely ground.
  2. Add the dates, vanilla, and sea salt, and process until a sticky dough forms.
  3. Stir in the mini chocolate chips and drop the dough by rounded tablespoons onto a parchment-lined plate.
  4. Freeze the dough balls for at least an hour until firm.
  5. For the banana soft serve, blend 1 or 2 frozen bananas with 1 to 2 tablespoons of water until smooth.
  6. Crumble a couple of the frozen cookie dough chunks into the banana mixture.
  7. Stir well and serve immediately.
