Healthy Vegan Cookie Dough

Ingredients

The dough

  • 1 can (15 oz) chickpeas, drained and rinsed
  • cup oat flour
  • ½ cup coconut sugar
  • 3 tbsp melted coconut oil
  • 1 tbsp vanilla extract
  • 2 tbsp non-dairy milk
  • ½ tsp fine sea salt

The mix-ins

  • ½ cup walnuts, chopped
  • ½ cup chocolate chips

Instructions

  1. Blend all ingredients except for the walnuts and chocolate chips in a food processor until smooth.
  2. Fold in the walnuts and chocolate chips by hand.
  3. Transfer the mixture to an airtight container and refrigerate for at least two hours, or ideally overnight, before serving.
