Ingredients

The dough

  • 1 cup oat flour
  • 1 ½ tablespoons refined coconut oil
  • 2-3 tablespoons maple syrup or agave nectar
  • 1 teaspoon vanilla extract or paste
  • ½ cup unsweetened almond butter
  • heavy pinch sea salt

The mix-ins

  • ½ cup vegan chocolate chips

Instructions

  1. Blend oats to make oat flour and set aside.
  2. In a food processor, combine coconut oil, maple syrup, vanilla extract, almond butter, sea salt, and oat flour, then pulse until a dough ball forms.
  3. Transfer the dough to a bowl and fold in chocolate chips.
  4. Scoop the dough into balls using a cookie scoop.
  5. Store any unused dough in an airtight container in the fridge.
