Ingredients

The base

  • 1 cup raw cashews (soaked for 6 hours or overnight then drained)
  • 1 cup unsweetened almond or coconut milk
  • 1 tsp pure vanilla extract
  • 5-7 whole medjool dates (pitted)
  • 2 Tbsp banana powder (ground banana chips)
  • 2 Tbsp coconut oil (melted)
  • 1 just ripe banana (sliced)

Optional toppings

  • to taste crushed vegan-friendly cookies (such as Nabisco Original Graham Crackers)

Instructions

  1. Prepare the ice cream churning bowl by placing it in the freezer the night before.
  2. Soak the cashews overnight or for at least 6 hours, then drain them thoroughly.
  3. Grind the banana chips into a powder using a coffee grinder or mortar and pestle.
  4. Blend all ingredients except the raw banana and cookies until creamy and smooth.
  5. Chill the mixture in the freezer for 2 hours or in the fridge overnight.
  6. Churn the chilled mixture in an ice cream maker according to the manufacturer's instructions for about 45 minutes.
  7. Spoon the mixture into serving glasses and layer with fresh sliced bananas and crushed cookies, if desired.
