Healthy Chocolate Chip Blizzard
Ingredients
The base

light (or full-fat) coconut milk

unsweetened cocoa or cacao powder
The mix-ins

mini dairy-free bittersweet chocolate chips

extra fine ground coffee or instant espresso (optional)
Instructions
- Soak cashews overnight or for at least 6 hours, then drain.
- Blend all base ingredients (except chocolate chips) until creamy and smooth.
- Chill the mixture in the freezer for 1.5-2 hours or overnight in the fridge.
- Churn the chilled mixture in an ice cream maker according to the manufacturer's instructions for about 45 minutes.
- Add chocolate chips and churn for another 1-2 minutes.
- Spoon into serving glasses and top with coconut whipped cream and cocoa powder or chocolate shavings, or freeze until firm for later.
