Healthy Chocolate Chip Blizzard

Ingredients

The base

  • 1 ¼ cups raw cashews
  • 1 14-ounce can light (or full-fat) coconut milk
  • 1 tsp vanilla extract
  • ¼ cup agave nectar or maple syrup
  • 1-4 Tbsp organic cane sugar
  • cup unsweetened cocoa or cacao powder

The mix-ins

  • cup mini dairy-free bittersweet chocolate chips
  • 1-2 tsp extra fine ground coffee or instant espresso (optional)

Instructions

  1. Soak cashews overnight or for at least 6 hours, then drain.
  2. Blend all base ingredients (except chocolate chips) until creamy and smooth.
  3. Chill the mixture in the freezer for 1.5-2 hours or overnight in the fridge.
  4. Churn the chilled mixture in an ice cream maker according to the manufacturer's instructions for about 45 minutes.
  5. Add chocolate chips and churn for another 1-2 minutes.
  6. Spoon into serving glasses and top with coconut whipped cream and cocoa powder or chocolate shavings, or freeze until firm for later.
