Ingredients

  • ½ cup oat flour
  • ½ cup whole-wheat pastry flour
  • ¼ cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1 pinch sea salt
  • ¼ cup dairy-free dark/semisweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (176°C) and prepare a baking sheet.
  2. Mix flaxseed meal and water to create a flax egg and set aside.
  3. Combine almond milk and vinegar, letting it sit for a few minutes.
  4. Add sugar, melted coconut oil, and vanilla to the flax egg and mix well.
  5. Incorporate the almond milk mixture and beat until combined.
  6. Sift the dry ingredients over the wet mixture and mix until well combined.
  7. Fold in the chocolate chips gently.
  8. Spoon the batter onto the baking sheet, flattening each spoonful slightly.
  9. Bake for 10 minutes, then let cool on a rack before freezing.
  10. Soften the ice cream slightly before scooping it into discs.
  11. Assemble the sandwiches by placing ice cream between two cakies.
  12. Wrap the sandwiches and freeze until firm.
