Instructions
- Preheat the oven to 350°F (176°C) and prepare a baking sheet.
- Mix flaxseed meal and water to create a flax egg and set aside.
- Combine almond milk and vinegar, letting it sit for a few minutes.
- Add sugar, melted coconut oil, and vanilla to the flax egg and mix well.
- Incorporate the almond milk mixture and beat until combined.
- Sift the dry ingredients over the wet mixture and mix until well combined.
- Fold in the chocolate chips gently.
- Spoon the batter onto the baking sheet, flattening each spoonful slightly.
- Bake for 10 minutes, then let cool on a rack before freezing.
- Soften the ice cream slightly before scooping it into discs.
- Assemble the sandwiches by placing ice cream between two cakies.
- Wrap the sandwiches and freeze until firm.
